Betaine anhydrous exists either as white crystals or a crystalline powder. It is hygroscopic, so anti-caking agent is needed in the manufacturing process. This quaternary ammonium exists as the zwitterion at neutral pH. And it occurs with an average abundance of 0.2 % - 0.3 % in the common variety of sugar beets.
As a result of a purification process, betaine is extracted from sugar beet molasses. Temperature, relative humidity control and other parameters were identified and controlled during the process.
Betaine is closely related to the amino acid glycine. Its primary function in mammals is within the metabolism of methionine. It's involved in liver function, cellular reproduction, and helping make carnitine. Studies in rats suggest that betaine may help protect against harmful fatty deposits in the liver.
Betaine protects cells, proteins, and enzymes from environmental stress like low water, high salinity, or extreme temperature. It also participates in the methionine cycle-primarily in the liver and kidneys. In fact, betaine has been shown to protect internal organs, improve vascular risk factors, and enhance performance. The growing body of evidence shows that betaine is an important nutrient for the prevention of chronic disease.
Betaine HCL and betaine anhydrous are provided. Added in the fodder, they could help to increase livestocks' muscle mass or the amount of usable meat. Bataine is also used to relieve the osmotic pressure on salmons' cells when workers transfer the fish from freshwater to saltwater.
